Dominican Cake, Bizcocho Dominicano

There are several Dominican cake recipes. Everyone gives it their own special touch and the recipe varies from person to person like it always happens with traditional recipes. We all try to get a soft and spongy cake, with the particular and unique taste that only the Dominican cake has. Its taste is similar to pound cake but with a softer texture. I have obtained very good results with the following recipe. If you are looking for a creamy, soft, and rich texture, then follow my recipe and step-by-step instructions.

The most common way that this cake is served in the Dominican Republic is with Pineapple Jam as filling and frosted with Suspiro (Meringue), our Dominican Frosting, but any fruit jam or custard could be used as filling for this cake.
